2 or 3 # whole chicken
2 teaspoons salt or Creole Seasoning
1 teaspoon freshly ground pepper omit if Creole used
1 lemon cut in half
1 whole head garlic halved horizontally
1 bay leaf
thyme optional
Preheat oven to 475 degrees. Wash and dry chicken. Season inside and outside, and put lemon & garlic halves & bay leaf inside cavity of chicken. Place on lightly oiled rack set into a small roasting pan. Roast for about one hour, or till done. Instant thermometer inserted into thickest part of thigh should read 165 degrees. Remove from oven & allow to rest for 10 minutes before cutting into serving pieces.
